Mustard BBQ Sauces

The past two weeks we covered your basic Tomato and Tomato BBQ Sauces.

This week we will run thru five basic Mustard BBQ Sauces.

These are mostly use real soon type of sauces.... so there are no canning directions for these!

 

 

"Carolina Mustard BBQ Sauce"

Yield: Makes about 1 1/2 cups

Ingredients:

1 cup prepared yellow mustard
1/4 cup honey
1/4 cup light brown sugar
1/4 cup white vinegar
ground black pepper to taste 

Directions

In a saucepan over medium heat, stir together the mustard, honey, brown sugar and vinegar.
Season with black pepper.
Bring to a boil, and let simmer for 5 minutes.
Pour over cooked pulled pork or beef.
If you want more flavor, let the meat simmer in the sauce for about 30 minutes.

 

"Columbia Gold Barbecue Sauce"

Yield: Makes > 3 cups

Ingredients:

2 cups prepared yellow mustard
2/3 cup cider vinegar
3 tablespoons tomato paste
1/2 teaspoon chipotle Tabasco sauce or you favorite hot sauce
3/4 cup sugar
2 teaspoons chicken bouillon granules or 1 cube
2 teaspoons dried rosemary leaves
1 teaspoon celery seed
3 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon table salt
1 teaspoon freshly ground black pepper

Directions

Mix the wet ingredients together in a bowl.
If you are using a bouillon cube, crush it with a spoon in a bowl or mortar & pestle and add it to the bowl.
Crush the rosemary leaves and celery seed in a mortar & pestle or in a blender or coffee grinder and add it to the bowl.
Add the rest of the dry ingredients to the bowl and mix thoroughly.
Let it sit for a an hour in the refrigerator for the flavors to meld.
No cooking necessary.
Leftovers will keep in the fridge for a month or more.

 

"KY Mustard BBQ Sauce"

Yield: Makes > 1 cups

Ingredients:

3/4 cup yellow mustard
1/4 cup apple cider vinegar
2-3 tablespoons brown sugar
1/2 tablespoon paprika
1 teaspoon worchestershire
1/2 teaspoon black pepper
1 teaspoon hot sauce
1 tablespoon ketchup
pinch of celery seeds

Directions

Mix the ingredients together in a bowl.

 

"Georgia Mustard Sauce"

Yield: Makes > 2 cups

Ingredients:

1 cup prepared mustard
1/2 cup brown sugar, firmly packed
1/4 cup apple cider vinegar
2 tablespoons butter
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon celery seed
1 teaspoon Tabasco

Directions

Combine all ingredients in a saucepan over a low heat.
Simmer for 15 minutes.

 

"South Carolina Yellow BBQ Sauce"

Yield: Makes 2 cups

Ingredients:

4 tablespoons butter
1 tablespoon onion powder
1/2 cup prepared yellow mustard (not dijon, just classic yellow mustard)
1/2 cup apple cider vinegar
1/2 cup brown sugar
1 tablespoon mustard powder
1 teaspoon salt
1 teaspoon chipotle pepper powder

Directions

Melt the butter over low heat in a medium saucepan.
Add the remaining ingredients to the pan
Cook over low heat for 15-20 minutes, stirring occasionally.
