ENCHILADA VERDE

 

Put tortillas in skillet with a wee bit of oil , one at a time to soften,
fill with chopped onions that are chopped fine and had boiling water poured over them and then drained
grate cheddar cheese or pepper jack cheese.

now fill tortillas one at a time with onion , cheese and place in pan seam side down, cover with Verde sauce........

this is the recipe for the Verde sauce.....
1/4 cup butter
1/4 cup flour
2 cup chicken broth
2 Tablespoon chopped jalapeno peppers or canned green chilis
cook till it thickens
add 1 cup sour cream (do not boil)

spread over enchilada and bake 20 minutes
top with cheese and bake long enough to melt the cheese ......

Serve with a nice green salad
