2 cups chopped onions
3/4 cup chopped green pepper
1/3 cup thinly sliced or chopped green onion or shallot
2Tablespoon fresh parsley minced fine
1 tablespoon finely minced garlic (more if ya like garlic)
1 1/2 chopped tomato
2 sausages ..(creole, French garlic , smoked or andouee sausage,
chopped small
2 lbs shrimp fresh - deveined and shelled
1 lb fresh crab fresh
2 lb fresh okra stems and tips removed.......
now make a roux
3/4 cup olive oil
3/4 cup flour
in large pan over medium heat cook the
pepper green pepper and onion , parsley and garlic
just sweat them for 10 minutes, vegetables should be lightly tan
add tomatoes and sausage , 2 1/2 quarts cold water let it cook , or I
should say heat some
add the crab and okra and seasoning, now add the raw shrimp
bring to boil cook for about 1 hr, add more water if it gets too thick
,,,turn heat down
also seasonings are as follows
3 whole crushed bay leaves
1 1/2 tsp thyme
salt
black pepper
cayenne
juice of one half of a lemon
10 whole allspice
1/2 tsp mace
8 whole cloves
this can be served over cooked rice and
you can play with seasonings and at the end turn off heat and add file'
powder it will thickend it about 1 -2 tsp
